Tacos: Trader Joe's Style

It is no secret that I have a new found obsession with Trader Joe's. I discovered this gem of a store a few weeks back. My roommate had been going for months, but I never really thought much about switching grocery stores. That is till a few of my friends were already going and I decided to tag along. I knew Trader Joe's offered cheaper prices and catered to smaller portion sizes, but I had no idea what was in-store (no pun intended).

Walking in, it was an absolute madhouse. It reminded me of an afternoon at the local Sam's club, where people were racing around with their buggies, all vying for the best deal. Shoppers were grabbing produce off the shelves like it was the last freaking red pepper on the planet. I was shocked at the animal like behavior that I witnessed. This was until I turned over the bottom of the Organic Chicken Stripes box and skimmed down for the price. FIVE FREAKING DOLLARS??!!! For organic chicken??!! Normally this would cost me close to 10 bucks at my local Safeway, and that's for non-organic chicken. I started walking around the store and was overwhelmed by the affordable prices. At that moment, I was hooked!

I could go on and on about my new found love of the Joe, but I don't want to bore you with that. I am sure y'all know just what I am talking about and have probably been going to this place for years. So in honor of Trader Joe's and the fact tomorrow is Friday, I am sharing one of my favorite recipes. All of these ingredients can be found at the local Joe and trust me, these homemade tacos will make you feel like you're dinning at a local Mexican restaurant in your own home!

Trader Joe's Chicken Tacos
Recipe is inspired by my friend Ryan Davies' recipe; adding a little twist of my own.

What You'll Need: 
Package of Flour Tortilla Shells
Package of Organic Chicken Strips
Package of Taco Seasoning
1 Red Pepper
1 Orange Pepper
1 Red Onion 
Package of Blended Mexican Cheese
Olive Oil
Now Follow Me:
Cut into thin slices, both peppers and red onion
In a large skillet, heat on high a tablespoon of olive oil
Cook chicken strips for about 10 minutes, flipping over every 2 minutes
In a medium size skillet, heat on high another tablespoon of olive oil
Insert cut up peppers and red onion
Cook veggies till onions start to caramelize and peppers start to soften 
When chicken is close to being done, add taco seasoning to both sides and finish cooking to desired finish
Pour cooked veggies in a small bowl
Move cooked chicken to a cutting board, and shred into thin pieces

Time to build the tacos
In the medium skillet, spray nonstick spray
Heat taco shell for 20 seconds on each side, to crispin' them up
Take taco shell, add layer of chicken, veggie mixture and then top with cheese
Once your tacos are built, place your plate in the microwave for 30 seconds to allow cheese to melt

Voilà, your tacos are complete!
Depending on what you like, you can also add sour cream, lettuce, salsa, etc., to give it even more of a tasty flair!

To accompany your tacos, I enjoy Trader Joe's Pineapple Salsa and corn tortilla chips!
