football season is already underway [gig 'em aggies!] and the air, depending on where you live, is starting to get more enjoyable with subtle breezes greeting us down here in georgia. these sausage cheese balls are the perfect tailgating appetizer, best served warm but still very good when served at room temperature. I made them a few weeks ago for stephen's tennis city finals tournament - as always - they were completely devoured. everyone loves these, but seriously, men LOVE these sausage balls. no pun intended.
I make these all the time and am always asked for the recipe. try these sausage balls the next time you have people over or bring them to a potluck or party or any occasion where men are involved and you will become a local celebrity. and of course, these fit right in at a tailgate.


even though I make these balls all the time - I actually made a mistake this time around. be sure to use UNCOOKED sausage. I was moving too quickly and had already started to cook my sausage on the skillet when I realized what I'd done. I quickly removed the sausage from the heat and moved on - everything turned out fine but the balls looks a little more like biscuits in these shots. don't worry, when cooked correctly, they are definitely balls not biscuits. moral of the story.... sloooow down even if you've made the recipe many times!

ingredients:
-3 c. bisquick
-1 lb. uncooked sausage (I use jimmy dean regular)
-4 c. grated cheddar cheese (REAL cheese, don't buy the pre-shredded kind)
-1/2 c. grated parmesan cheese
-2 T. italian seasoning
-1/2 c. milk
instructions:
1. preheat oven to 350 degrees and get out a baking sheet. mix all ingredients up by hand in a large bowl.
2. roll mixture up into 1 in. balls and place in rows on the baking sheet.
3. bake for 30-35 minutes. let cool and enjoy!
