Easy, Healthy, and Delicious Chicken Salad
Delicious Chicken Salad Sandwich! |
1/2 rotisserie chicken
1/3 cup pecans, chopped
2/3 cup dried cranberries, chopped
1/2 cup granny smith apple, diced in small chunks
1/2-3/4 cup of greek yogurt (depending on your preference)
2 tablespoons of apple cider vinegar
1 tablespoon of fresh rosemary, minced
Pull the chicken apart with your fingers and chop with a knife until it is of a fine consistency. Combine the chicken, pecans, cranberries, and apple in a large mixing bowl. Toss together with the greek yogurt, apple cider vinegar, and rosemary. Refrigerate when finished. From my experience the salad is great when you first make it, but even better after it's been refrigerated for a few hours! Try it on a toasted english muffin with lettuce and sliced avocado for a super light and healthy lunch!
