IF YOU LOVE PIZZA, YOU ARE GOING TO LOVE THIS LOW-CARB HIGH PROTEIN GRILLED PIZZA CHICKEN! IF YOU DON’T LOVE PIZZA, YOU ARE CRAZY!

Just kidding! But seriously, who doesn’t like pizza?!
Like I’ve shared with y’all before, we grill everything possible in the summer. We also LOVE pizza, but it isn’t exactly the healthiest meal around. I wanted to make a healthier alternative with lots of protein – so I knew it would be great to somehow incorporate chicken into our pizza! I foundthis recipe for pizza chicken on Pinterest (where else?) but everyone seemed to be breading their chicken. Then I found a few cooked in oil in a skillet, but I didn’t want to do that either!  So that is what led us to test out our recipe of Grilled Pizza Chicken! At first, my sweet husband was a bit weirded out by pizza and chicken together and you may be too….

TURNS OUT, IT’S DELICIOUS!! WE HAVE MADE IT COUNTLESS TIMES SINCE THEN AND I’M SO EXCITED TO SHARE THE RECIPE WITH YOU! 

We marinate our chicken in light Italian dressing before we grill it. Then when it is cooked through, Richard takes it off the grill and brings it to me where I top it with pizza sauce, cheese, and other toppings. Then, I just pop it in to broil for just a couple of minutes! SOOOO easy, friends!

Pizza-topped Grilled Chicken is super simple to make and it’s fun because you can get creative with it! You can customize your chicken with all of your favorite  toppings – pepperoni, ham, sausage, mushrooms, peppers, olives, you name it!

Richard and I are pretty simple when it comes to pizza. Mostly, we want cheese on cheese on cheese, with a little pepperoni! But you can load up your Grilled Pizza Chicken however you like. In fact, you can let everyone choose their toppings for their own pizza chicken. Let your family help “top” their own and have fun with it!

Make sure you watch your broiler carefully, it doesn’t take but a minute or two for that cheese to get brown and bubbly!

I SERVED OUR GRILLED PIZZA CHICKEN WITH GRILLED ZUCCHINI, ANGEL HAIR PASTA TOSSED WITH OLIVE OIL AND PARMESAN, AND BREADSTICKS! IT’S A QUICK AND EASY MEAL THAT EVERYONE LOVES!

Grilled Pizza Chicken
Serves 4
Grilled Chicken topped with your favorite pizza toppings for a healthier, low-carb, high protein alternative to your favorite pizza!

Ingredients
  1. 4 chicken breasts (I pounded mine thin to cook more evenly!)
  2. 1 cup light Italian dressing
  3. 8 tablespoons pizza sauce
  4. 12-15 slices turkey pepperoni
  5. other favorite pizza toppings - veggies, sausage crumbles, ham, etc.
  6. ½-1 cup 2% mozzarella cheese
Instructions
  1. Marinate chicken in Italian dressing for at least 2 hours or overnight.
  2. Grill chicken until done (internal temp of 165 degrees; 12-15 mins).
  3. Preheat oven to Broil. Place chicken on foil lined rimmed baking sheet.
  4. Spread about 2 tablespoons of pizza sauce on each chicken breast. Top with pepperoni, cheese, and any other desired toppings.
  5. Broil until cheese is melted and bubbly. (Watch closely! This only took mine about 1 minute and 30 seconds.)
