ANYTHING THAT MAKES MY MORNING ROUTINE EASIER IS MY FAVORITE THING. DO YOU FEEL ME?! 

I love summer, but I am getting so ready for fall. I am so “basic” in the sense that pumpkin is my obsession and I would wear huge sweaters with leggings and boots all year if I could. Not to mention FOOTBALL is coming! I can’t wait to share pumpkin and apple recipes as well as tailgating ideas with y’all! BUT with fall comes back to school and with school starting back, we all need some help getting back into a routine. I make these ALL the time and there are a ton of variations you can use to switch them up, but I’m sharing our favorite version with you today – bacon, egg, & cheese!

They only take about 20 minutes to whip up and with that you have breakfast ready for the rest of the week! Just pop one  in the microwave in the morning and you are all set! These are also freezer-friendly so you can make a bunch of them ahead and heat them directly from the freezer to the microwave.

On-The-Go Mini Breakfast Casseroles
Serves 6
A make ahead breakfast that is low carb, full of protein and easy to heat up on the go! :)

Ingredients
  1. 6 large eggs
  2. 1 slice whole grain bread
  3. 2 cups baby spinach, chopped
  4. 1 tablespoon onion flakes
  5. 1 teaspoon minced garlic
  6. 4 slices center cut or turkey bacon, cooked and chopped
  7. 3/4 cup reduced fat cheddar cheese, divided
  8. 1/4 cup skim milk
  9. 1/2 teaspoon salt
  10. 1/4 teaspoon pepper
Instructions
  1. Preheat oven to 350.
  2. Prepare muffin tins with nonstick spray or liners.
  3. Break up 1 slice of bread in the muffin cups.
  4. Whisk eggs, spinach, minced onion, minced garlic, bacon, cheese, milk, and salt and pepper together.
  5. Pour egg mixture in muffin cups. You can add a little extra cheese on top.
  6. Bake at 350 for 15-20 minutes.
Notes
  1. The recipe makes 6 muffins, but is easily doubled to make 12! :)
  2. These can be stored in an airtight container in the fridge up to 1 week. Microwave 30-45 seconds to reheat.
  3. These can be frozen to reheat.
